Healthy and tasty recipe for a cream of baked cauliflower soup – yummy!
1 medium cauliflower
2 cloves of garlic
2 liters of broth
1 tablespoon butter
3 tablespoons olive oil
1 teaspoon ground cumin
1 to 2 teaspoons of curry
salt and pepper
canola / olive oil for baking
1. Rinse the cauliflower , cut into smaller pieces , put them on a metal plate , drizzle with oil / olive oil and a little salt . Put in the oven (preheated to 180 degrees) and bake for about 40 minutes until you get a lightly browned cauliflower .
2. Peel the onion and cut into cubes. Peel the garlic and cut into slices. In a skillet (or straight in a cast iron pot ) heat 1 tablespoon of butter and 3 tablespoons of olive oil and fry the onion and garlic, being careful not to burn them .
3. Add cumin and curry (whether you use a mild or hot curry, can reduce or increase the amount needed… ) and fry the whole thing for 1-2 minutes. Add the cauliflower florets and mix well -you can add a little olive oil – and fry the whole thing for a little bit. Transfer to a larger pan (if not already using one) and add the hot broth , season with salt and pepper. Cook until the cauliflower is tender and then mix using a blender!
