Stuffed Sweet Potatoes


My absolute favourite dish lately… I love sweet potatoes and goat’s cheese and this delicious recipe combines the two together! 


8 medium sized sweet potatoes
200g kale or spinach
1 onion
2-3 cloves of garlic
cheese (goat’s cheese is best, but you can use mozzarella or feta)
oil for frying and baking

Scrub the potatoes, drain and slice lengthwise into halves. Drizzle with olive oil and put in a preheated oven (180 degrees). Bake for about 50-60 minutes until the potatoes are soft enough to put a fork through them easily.

After baking that potatoes, let them cool down before excavating them with a spoon. Put the potato pulp into a bowl.

Heat up some olive oil on a frying pan, add chopped onion and crushed garlic. Briefly fry over low heat until the onion has softened. Add rinsed kale or spinach and briefly fry until it softens. Transfer to the bowl with potato pulp. Season lightly with salt and pepper. Add the cheese in small pieces. Stir everything together and fill the potato skins back.

Put in the oven and bake for approx. 20 minutes. Enjoy!!!
