Vegan Gingerbread Cookies


An amazing vegan option for this holiday! 

To make these lovely vegan gingerbread cookies you will need the following…


30 grams of wheat flour
1/2 a cup of cane sugar
1-2 teaspoons of gingerbread spices (cinnamon, ginger – to taste)
100g vegetable oil (or even better – coconut oil!)
1/2 teaspoon of baking soda

1. Knead all the ingredients together. If the dough doesn’t stick together, add a little water bit by bit until all the ingredients combine. Wrap the dough in  cling film and refrigerate for 30 minutes.

2. Roll out the dough and use moulds to cut the cookies into shapes you want! Place the cookies on a baking tray lined with baking paper and bake at 180 degrees for about 10 minutes.

3. Cool on a wire rack and finish with icing and decorations :)
